How to make Cupcakes at Home during Quarantine?

This quarantine has been a tough phase for all of us, especially for the ones who cannot live without their regular sugar fix. It’s been months now and most of us still haven’t stepped out of the safety of our homes. Our tastebuds are dying to indulge in that sugary goodness and feel the fluffy texture of our favorite cakes.
But there’s always a silver lining. While being stuck at home is not the ideal situation, you can surely make use of this opportunity to learn something new, like baking your own cupcakes! Yes, it’s time to take matters in your own hands.
So put on your chef’s hat as we are going to tell you all about how to make delicious cupcakes at home.

Let’s start with something easy and basic – Vanilla cupcakes. They are not only super simple to make but can be decorated in whichever way you want. So let’s get started!

What Do You Need?

  • ¾ cup of sugar
  • ¾ cup of buttermilk
  • ¼ cup of vegetable oil
  • ¼ melted or softened salted butter
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 1 ¾ cups of all-purpose flour
  • 1 ¼ teaspoon salt
  • 2 teaspoons of baking powder

What To Do?

  • Preheat your oven at 350 degrees F.
  • Take a large bowl and mix the butter, vegetable oil, and sugar nicely together until they are light and fluffy. Add eggs, buttermilk, and vanilla extract and beat them until they are smooth and properly mixed.
  • Now add flour, baking powder, and salt, and mix. Make sure that there are no lumps in the mixture.
  • Take a muffin tin and line it with cupcake liners. Fill each liner half full. (Do not fill them till the top or they will overflow in the oven)
  • Bake at 350 degrees Fahrenheit for 14 to 18 minutes. Check by inserting a toothpick. If it comes out clean, it’s done!
Now comes the frosting. Here’s what all you’ll need.
  • ¾ cup of powdered sugar
  • 3 tablespoons butter
  • ¼ teaspoon vanilla extract
  • 1-2 teaspoons of milk

What To Do?

Mix the powdered sugar and butter and beat them together until they are smooth. Add vanilla extract and milk. Mix them until the texture is light and fluffy. If the frosting is too thick, add a little more milk and if it’s too runny, add some more sugar.
Now decorate your cupcakes with this delicious vanilla frosting and serve! You can also top them with some colorful sprinkles or choco chips, whatever you like.
You can customize this recipe into your favorite flavor by using the chosen extract. For chocolate cupcakes, just replace ¾ cups of flour with ½ cups of cocoa powder and follow the recipe as it is.

Additional Tips

For Extra Fluffy Cupcakes

While the above recipe will help you make some delightfully fluffy cupcakes, you can make them even fluffier. All you need to do is separate the egg whites from the egg yolks. Add the yolks into the batter and beat the egg whites separately with the finished batter. Your cupcakes will be super moist, bouncy, and fluffy.

Filling the Cupcakes from the Inside

Let’s admit, filling your cupcakes from the inside will make them ten times more delicious! Here’s how you can do it.
Once the cupcakes are ready and cooled down, put your filling in a piping bag. Make sure it has a wide and open-ended tip. Pierce your cupcake slightly from the top with the tip and squeeze in about 2 teaspoons of the filling. Don’t add too much or your cupcake will split.

Tip: If you don’t have a filling, you can fill your cupcakes with the prepared frosting.

Cupcakes are most certainly the easiest to make and get ready in just a few minutes. Try this recipe and quench your sweet tooth.
