To prepare a traditional plum cake, dry fruits and nuts are soaked in rum or brandy for a very long period (a few months). But who has the time for that?
In this recipe, we are not using any alcohol. Here we are using orange juice, lemon juice, and water to soak the dry fruits. Don’t worry, we won’t be soaking them for too long. For dry fruits, we are using raisins, dried apricots, dries cranberries, prunes, and tutti frutti. But you can use any dry fruits that you like!
Instead of egg, we are using yogurt to make our plum cake moist and soft. Yogurt is an exceptional ingredient that will enhance the texture of the cake and make it immensely fluffy and light. For a rich brown color, we’ll be using brown sugar instead of regular white sugar. Moreover, we will also include some freshly grounded fragrant spices to add an enticing aroma and flavor to the cake.

Note: To ensure that the cake is super fluffy and moist, make sure to mix the oil and sugar until they are completely combined, and the consistency becomes creamy. Only then add the yogurt. Otherwise, your cake will become dense and oily.
